This soup is super easy to make with your Thanksgiving leftovers. You'll forget that it's made from left over foods! 

Ingredients

2 Cups shredded turkey

1 rib celery finely chopped

1 medium carrot finely chopped

½ a medium onion finely chopped

2 Tlbs Olive Oil

1 ½ Cups green bean casserole

1 Cup mashed potatoes

4 Cups Turkey broth

2 Cups water

 

Directions

In a large pot, sweat the celery, carrot and onions. Add into crockpot.

Add the turkey broth, water, and turkey. Cook on low for about 4 hours. 

When the liquid is hot, add the mashed potatoes and the green bean casserole. Allow these to “melt” into the hot turkey broth. This will make a creamy base. Cook for another hour or two on low.
